Far East gastronomy combines the tastes of the sea and the taiga, ethnic cuisines and cultures of indigenous peoples, hunters’ traditions, and cuisines of Asian countries. Today, growing interest in gastronomic culture is manifested in various forms, such as gastronomic travel, educational programmes, busy event schedules, as well as events that help promote regional brands seeking original and unique products that set that particular region apart from others. Gastronomic identity based on each region’s local specifics is a valuable advantage that could bolster its tourist potential and create new opportunities for developing the economy and preserving traditions. How can we transform Far Eastern cuisine into a recognizable gastronomic brand both in Russia and internationally? How do Russian regions' territorial cuisines become fully-fledged tourist attractions and create jobs for the creative class of chefs and restaurateurs? How can gastronomic festivals become major regional mass events and business areas in their own right? What place does Russian national/regional cuisine hold in the tourist infrastructure? Where do we find the talent to work with local foods: do we foster them locally or invite people from capital cities? What do locals eat and is consumer culture developed in Russia?
